250g of water
20g of ground coffee
Syphon coffee maker
Attach the filter into the syphon. We will use a cloth filter as this will give us a little bit of texture.
Weigh and grind your coffee a bit thinner than your normal drip, as fine sugar, and add to the upper chamber.
Bring the water to the boil if you want to speed up the process, and pour the hot water in the lower chamber.
Assemble the syphon. Do not do this too hard as this will make it more difficult for you to detach.
Switch on the burner and wait for the evaporation system to work its magic.
When the water has started to boil check the temperature in the upper chamber and turn the heater down, you want to reach almost boiling point.
When the water reaches 95 °C let 30 seconds pass
Stop the heat and stir gently.
Make sure that the mixture on the top is homogeneous and let it go down
Detach the chambers and wait a minute to pour, it’s really hot! Pour and enjoy this thin but flavour packed cup of coffee.
